When creating a new blend we always aim to produce something delicious, and a little bit different to the blends that have gone before – this is equally true for Fidelio! On the cupping table we blended a coffee we loved for it’s gummy sweetness with a coffee we loved for its delicate acidity and tea-like flavours. The result was Fidelio – bright, sweet blend with notes of lemon meringue pie and marie biscuits! It produces delicate bright V60s with notes of pomelo, lemon meringue and a deep raisin sweetness. We believe it shines as a pour-over but it behaves nicely with milk too; producing milk beverages with notes of marie biscuits, nougat and a subtle lemon tang.
